What is the Baeckeoffe

Traditionally cooked in the backer’s oven (hence its name „ Baeckeoffe“ this Alsatian stew harmoniously combines three Kinds of meat – pork, beef, lamb – which are left to cook for several hours in a tasty Alsatian white wine, potatoes and onions.


This dish used to be eaten on washing-day and was prepared the previous day, at a time when the housewives met together once a week at the washing place. They used to bring their “terrine” in the morning to the baker’s and take it bake steaming hot at lunch time.

We have revived this dish for you, and propose it along with many other Alsatian grandmother’s secret recipes, in a traditional, warm and friendly setting.
